Feijoada

 The world cuisine for April is Brazil. Brazil is a country located on the South American continent and is the largest in area in South America.

 Feijoada is Brazil's national dish, a stew slowly simmered with kidney beans, pork, beef, sausages, and other meats. The slowly cooked meat becomes tender and soft, and you can also enjoy the fluffy texture of the beans infused with the rich flavor of the meat.

 For school lunch, white kidney beans and red kidney beans were used and simmered together with pork, finished with a tomato flavor.

Yoshino Soup

 Yoshino Soup is a clear broth thickened with starch made from the root of a plant called "kudzu," characterized by a smooth texture and slow cooling. It is named after the Yoshino region in Nara Prefecture, which is known for producing high-quality kudzu.

 Kudzu starch is said to have been used in Japanese sweets and cooking since the mid-Edo period, and it is widely used for making traditional sweets like kuzumochi and for thickening sauces such as ankake.

 In the school lunch, dashi was made using dried bonito flakes, and the soup containing several kinds of vegetables was thickened with potato starch.
