Fermented foods seem to have some benefits. Fermented foods are, so to speak, the crystallization of human wisdom, created by our ancestors through long periods of trial and error. The recent boom in fermented foods is due to their deliciousness and health benefits, but in this course, let's consider the rational wisdom and ingenuity contained within them.

1st January 18 Microorganisms Involved in Fermented Foods
What are fermented foods? Learn about the microorganisms involved in fermentation and their functions. Also, explore the types of fermented foods.
2nd February 15 Wisdom of Microorganism Utilization Seen in Sake Brewing
Sake is made through the remarkable collaboration of three types of microorganisms: mold, yeast, and bacteria. Let's take a look at the wisdom of using microorganisms in sake brewing.
3rd March 15 Various fermented foods found in seafood
When it comes to fermented seafood products, you might only think of salted fish guts at most, but there are various kinds such as kusaya, funazushi, and shottsuru.

Each class is 90 minutes long.
